Named Canada’s Best Farm to Table Restaurant, we are passionate about sourcing locally and our relationship with our suppliers is second to none. We work closely with local farmers, growers, foragers, and fishermen to bring the highest quality, freshest and best ingredients to life through our creative menus.
Our wood-stone pizza oven is at the heart of our kitchen and our dough has been diligently perfected to deliver Neapolitan-style pizzas with seasonally changing toppings over a delicious crust. Crisp organic salads and seasonal vegetables are served alongside inventive proteins and housemade pastas. We encourage you to order a range of dishes from our extensive menu selection, which are best shared family-style.
At Nightingale, wine is an essential part of the experience. The list leans into Italian and Mediterranean classics alongside lesser-known gems—thoughtfully curated by Wine Director Chris Rielly (Sommelier of the Year 2025) and brought to life by our dedicated wine team. Designed to be both approachable and engaging, it invites discovery whether you’re exploring something new or returning to a favourite. Recognized at the Vancouver International Wine Festival Wine Program Excellence Awards—with Gold for Best Premier Wine List and Best Wine Program in a Contemporary Restaurant, and Bronze for Wine Program Excellence of the Year—the list features over 200 labels to discover. A generous selection is available by the glass and half bottle, making it easy to pair across the menu. Cocktails offer playful twists on the classics alongside original creations, complemented by local craft beers, a diverse spirits list, and a considered range of zero-proof options—including alcohol-free sparkling and locally made kombucha.
Nightingale’s name is inspired by Aesop’s Fable of the Hawk & the Nightingale, which tells the story of a hungry hawk who chooses to keep his tiny nightingale instead of waiting for a bigger bird to come along; it gives us the proverb ‘a bird in the hand is worth two in the bush’.
